Uff da! It has become an annual tradition to use the Veterans' Day holiday as our day to "crank out" the yearly lefse supply. It's a full evening of work and we've found it to be a nice family bonding activity. We picked up the necessary supplies on our way home from work yesterday and by 5:30 Carolyn was peeling potatoes. Next step was for me to cut them up, boil them and get them mashed.
For those of you who don't know what lefse is, here's our explanation: you boil and mash potatoes (my mother-in-law says red ones from the Red River Valley are best...I used Idaho white. I go for what is cheaper!). Add some cream, butter, sugar and salt and mix it all up.... let it cool....rice the potatoes to get rid of any lumps (and some skin, in my case) and add flour: Elyse
is ricing the potatoes and Carolyn is adding the flour.
We almost got our pancake griddle out last night just to speed things up....but we didn't. Fry both sides and enjoy warm or cold. We like ours with: butter (Carolyn and Elyse and Scott), butter and sugar (Zona and Scott), plain (Scott). I have heard of others putting brown sugar on and some using cinnamon.
