We never remember it's Pi day until it's too late. The evening of March 13 we realized, "Tomorrow is Pi day! We should take in a pie to our class!" Well it's a great idea...but not at 8:30 p.m. on a Wednesday night. SO after school on March 14 we decided to make a pie...what kind to make? We originally planned to make a lemon meringue pie because, hey, when you have lemons: make lemon pie. But that would have required a trip to the store for a pie crust...so we decided to try a coconut cream pie. Thank heavens for Betty Crocker and away we went. It was very pretty - and yummy, I might add.
